This morning we are celebrating the simple, yet delicious art of French Baking. We will making a sweet dough, to make the yeast-risen cake, Rum Baba (Baba au Rhum), and sweet pastry to make the all time classic Tarte au Citron.
Ingredients
200g Strong White flour
250g Plain flour
300g caster sugar
2g active dried yeast [8g fresh yeast]
120ml milk
6 large eggs
200g soft butter plus a little extra for greasing
3 lemons
1 orange
20ml dark rum
400ml double cream
40g icing sugar
1½ tsp vanilla paste /1 ½ vanilla pod
2g salt
